Spinach soup

This smooth and vibrant green soup is a classic Nordic comfort food. It has a delicate, creamy texture and is traditionally served with halved boiled eggs.

Boil eggs

Place 2 eggs in a small pot of water, bring to a boil, and cook for 8 minutes until hard-boiled.

Cool and peel eggs

Drain the hot water from the eggs, rinse them under cold water until cooled, then peel and set them aside.

Melt butter

Melt 25 ग्राम butter in a large saucepan over medium heat.

Create roux

Whisk 27 ग्राम wheat flour into the melted butter and cook for one minute without letting it brown.

Add milk and water

Gradually pour 500 मिली milk and 500 मिली water into the flour mixture while whisking constantly to ensure the base is smooth and free of lumps.

Simmer base

Allow the liquid to simmer gently for about 5 minutes, stirring occasionally as it thickens.

Prepare spinach

Defrost 150 ग्राम spinach and squeeze out any excess liquid, or finely chop fresh leaves.

Incorporate spinach

Stir the spinach into the thickened base so it creates a light green soup with dark green flecks.

Season soup

Add 5 मिली salt, 2.5 मिली white pepper, and 4 ग्राम sugar to the pot and stir well.

Final simmer

Let the soup simmer for another 2 minutes so the flavors meld together.

Serve

Ladle the soup into bowls and garnish each portion with the boiled eggs cut into halves.

You use the service in accordance with law and good practice. You are responsible for content you create. We may remove content or close accounts if terms are violated or for other reasons.

6. Rights and data

The service software and brand belong to us. Content you save remains in the service, and we may store, process and delete it for the service’s needs. You have the right to use the service – service data and control stay with us.

7. Privacy

We process your personal data in accordance with data protection law and our privacy notice. Email is used for login and communication. We do not sell your personal data. We are responsible for how data is processed.

8. Liability
