Peel and finely dice 1 onion into even pieces.
Crack 3 eggs into a small bowl and whisk them lightly with a fork until the yolks and whites are combined.
Heat 15 ml vegetable oil in a large pan or wok over medium-high heat and fry the diced onion until it becomes soft and translucent.
Push the onion to one side of the pan and pour the whisked eggs into the empty space, stirring gently until they are just set but still moist.
Add 400 g cooked rice to the pan, breaking up any large clumps with a spatula as you mix it with the eggs and onion.
Pour 30 ml soy sauce and 2 ml black pepper over the mixture and toss everything together thoroughly.
