Steg
Preheat the oven to 200 degrees so you can finish cooking the patties in the oven if necessary.
Peel and chop the 1 onion into very small pieces.
Mix the 100 ml cooking cream and 30 g breadcrumbs in a bowl and let the mixture swell for about five minutes.
Add the 400 g ground beef, chopped onion, 1 egg, 5 ml salt, and 2 ml cracked black pepper to the breadcrumb mixture.
Mix the meat dough into a smooth mass by hand or with a spoon, but avoid overworking it so the texture of the patties doesn't become tough.
Crumble the 100 g blue cheese into small pieces into a separate dish.
Shape the dough into eight even balls, press a hole in the center of each ball, fill the hole with crumbled blue cheese, and close the meat tightly around the cheese to form patties.
Heat the 20 g butter in a pan and fry the patties over medium heat on both sides until they have a beautiful brown surface and are cooked through.
Set the patties aside and pour the 200 ml cooking cream and 100 ml beef stock into the same pan.
Add the 10 ml rose pepper, 5 ml cracked black pepper, and 5 ml soy sauce to the sauce.
Let the sauce simmer over low heat for a few minutes until the consistency thickens slightly.
