Traditional Khachapuri

Fancy Ravioli

An iconic Georgian cheese bread that is soft, rich, and perfect for sharing.

Ingredients

500 gwheat flour
11 gdry yeast
5 mlsugar
5 mlsalt
250 mlwater
30 mlbutter
200 gfeta cheese
200 gmozzarella cheese
2 pcseggs
50 gbutter for filling

Instructions

Prepare the dry ingredients

In a large bowl, mix 500 g wheat flour, 11 g dry yeast, 5 ml sugar and 5 ml salt.

Add liquid and fat

Gradually add 250 ml water and 30 ml butter melted. Mix until a supple dough forms.

Knead the dough

Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

Let the dough rise

Place the dough back in the bowl, cover with a cloth, and let it rise in a warm place for about 60 minutes, or until doubled in size.

Prepare the filling

In a bowl, mix 200 g feta cheese grated or crumbled, 200 g mozzarella cheese grated, 2 piece eggs and 50 g butter for filling.

Divide the dough

Once the dough has risen, divide it into 4 equal parts.

Preheat the oven

Preheat the oven to 200 degrees.

Shape the bases

Shape each piece of dough into a round disc.

Add the filling

Divide the cheese filling evenly in the center of the dough pieces.

Shape the Khachapuri

Lift the edges of the dough towards the center and pinch them shut, leaving an opening in the middle.

Bake

Place on a baking sheet lined with parchment paper and bake at 200 degrees for about 20 minutes.
