
Poor Knights
A classic breakfast or dessert where dry slices of white bread are dipped in seasoned milk and fried in butter until crispy. Serve these golden-brown treats traditionally with whipped cream and jam.

In a deep plate, mix together 250 ml milk, 1 egg, 13 g sugar, 5 ml cinnamon, and 2 ml vanilla sugar. Stir the mixture until the sugar has dissolved.
Cut 8 slices of white wheat bread and place them in the milk mixture on the deep plate.
Let the bread slices soak in the milk mixture for about a minute on each side so they soften but do not fall apart.
Heat a frying pan over medium heat and add 25 g butter to the pan for frying.
Place the bread in the pan and fry the slices for a few minutes per side until they are beautifully golden brown and crispy.
Whip cold 200 ml heavy cream and 9 g sugar into a fluffy foam in a separate bowl.
