
Strawberry Quark
Classic Finnish strawberry quark is a light and fresh dessert that is perfect as a summer treat.

Steps
If using frozen strawberries, let them thaw at room temperature or speed up the process in the microwave. If using fresh strawberries, hull and chop them.
Mash about 300 g strawberries with a fork or lightly puree them with a hand blender. Leave a few strawberries for decoration if desired.
Whip 200 ml whipping cream into a soft peak foam.
Add 250 g quark, 45 g sugar, and 5 g vanilla sugar to the soft whipped cream. Mix gently until smooth.
Combine the prepared strawberry puree with the quark-cream mixture and fold gently until the strawberries are evenly distributed. Avoid overmixing to maintain the texture.
Portion the strawberry quark into dessert bowls. Let the dessert set in the refrigerator for at least 30 minutes before serving to allow the flavors to meld and the texture to firm up.
