Peel and wash the 500 g potatoes and 2 carrots. Cut the potatoes into suitable cubes and the carrots into thin slices. Rinse and cut the 0.5 leek into thin rings.
Heat the 30 g butter in a large pot over medium heat. Add the potatoes, carrots, and leek to the pot. Sauté the vegetables for about 5 minutes until they soften slightly.
Pour the 700 ml fish or vegetable stock into the pot and add the 1 bay leaf. Bring to a boil and let simmer until the potatoes are almost cooked, about 15 minutes.
Cut the 400 g salmon into pieces about 3 cm in size.
Add the salmon pieces to the soup and let them cook for 6 minutes, or until the salmon is just cooked through. Then pour in the 200 ml heavy cream or cooking cream and stir gently.
Season the soup with 5 ml salt and 2.5 ml white pepper. Remove the bay leaf from the soup. Finally, stir in the 30 ml chopped dill.
