
Brita Cake
A classic summer Brita cake, perfectly filled and decorated with fresh berries. Ideal for any coffee table.

Cream the 150 g butter and 135 g sugar. Add 4 eggs egg yolks one by one into the butter-sugar mixture, whisking thoroughly. Mix the 130 g wheat flour and 10 g baking powder together. Add the flour mixture and 150 ml milk alternately to the dough.
Spread the dough in a thin layer onto a baking sheet lined with parchment paper.
Whisk 4 eggs egg whites into a stiff foam. Gradually add the 180 g sugar while continuing to whisk until the mixture is stiff and glossy.
Spread the meringue mixture over the base dough.
Bake at 175 degrees Celsius on the middle rack of the oven for about 20 minutes.
Let the cake base cool down and then cut it in half.
Cut the 1000 ml strawberries in half. Whip the 400 ml heavy cream into a foam and season with 25 g sugar.
Place one half of the cake on a suitable serving platter. Spread half of the whipped cream and half of the strawberries on top. Place the other half of the cake on top.
Spread the rest of the whipped cream on the surface. Decorate with strawberries.
