
Fried Vendace
Traditional fried vendace is a Finnish market square classic. The fish are rolled in rye flour and pan-fried in plenty of butter until golden brown and crispy.

Mix 90 g coarse rye flour, 5 ml salt, and 2.5 ml white pepper together on a plate or in a plastic bag.
Dry the 500 g cleaned vendace with paper towels and roll them in the rye flour mixture so that the fish are evenly coated.
Heat a frying pan and melt half of the 25 g butter until it stops foaming and gets some color.
Place half of the breaded vendace in the pan and fry for 3 minutes per side until they are crispy.
Remove the cooked fish to a serving platter, add the rest of the 25 g butter to the pan, and fry the remaining vendace in the same way until golden brown.
