Instructions
Peel and wash 500 g potatoes and 2 carrots. Cut the potatoes into cubes and the carrots into thin slices. Rinse and slice 0.5 pcs leek into thin rings.
Heat 30 g butter in a large pot over medium heat. Add the potatoes, carrots, and leek. Sauté for 5 minutes until they soften slightly.
Pour in 700 ml fish or vegetable stock and add 1 pcs bay leaf. Bring to a boil and simmer until potatoes are nearly tender, about 15 minutes.
Cut 400 g salmon (skinless and boneless) into 3 cm pieces.
Add the salmon to the soup and cook for 6 minutes. Then pour in 200 ml heavy or cooking cream and stir gently.
Season with 5 ml salt and 2.5 ml white pepper. Remove the bay leaf. Finally, stir in 30 ml chopped dill.
Let the soup rest for a moment. Serve hot with fresh bread.
