Salmon Soup
Traditional Finnish salmon soup is a warm and earthy dish, perfect for chilly days. This recipe combines the mild flavors of salmon, potatoes, and a clear broth into a delicious and hearty meal.
Ingredients
Steps
Peel and wash 500 g potatoes and 2 carrots. Cut the potatoes into cubes and the carrots into thin slices or half-moons.
Rinse and chop 1 leek into thin rings.
Place the potatoes, carrots, and leek into a pot. Add 1000 ml of water and dissolve 1 fish stock cube into it. Add 1 bay leaf. Bring to a boil and simmer until the potatoes are nearly tender, 15 minutes.
Cut 300 g salmon (boneless and skinless) into 3 cm cubes.
Add the salmon pieces to the soup and let them cook for 7 minutes, or until the salmon is just cooked through.
Season the soup with 5 ml salt and 3 ml white pepper. Check the flavor and adjust with more salt or pepper if needed.
Remove the bay leaf from the soup. Stir in 30 ml dill before serving. Let the soup rest for a moment and serve immediately with fresh bread.
