Peel and dice 1 carrot into small cubes. Rinse and cut 150 g broccoli into small florets. Peel and mince 2 garlic clove. Chop 2 spring onion. Crack 2 eggs and whisk lightly. Thaw 100 g peas.
Heat 15 ml rapeseed oil in a pan. Pour the eggs into the pan and fry into a thin omelet. Remove the omelet from the pan, let it cool, and cut into strips.
Add 15 ml rapeseed oil to the pan. Add the carrot and broccoli. Sauté over high heat for 4 minutes. Add the garlic and peas. Sauté for one more minute.
Add 400 g rice (cooked and cooled) and 200 g shrimp (cooked, peeled). Stir and fry over high heat for 5 minutes until the rice is hot.
Add 15 ml soy sauce, 5 g sugar, 2.5 g salt, and 1.25 g white pepper. Stir in the prepared omelet strips and 15 ml sesame oil. Check the taste.
Serve immediately while hot. Garnish with spring onions.
