Kermainen Lohikeitto

Smoky Quiche

Perinteinen suomalainen kermainen lohikeitto on lämmittävä ja maanläheinen ruoka, joka sopii täydellisesti viileisiin päiviin. Tässä reseptissä yhdistyvät lohen miedot maut, perunat ja kerma herkulliseksi ja täyttäväksi ateriaksi.

400 glohta (pala tai filee)
500 gperunaa
2 pcporkkanaa
0.5 pcpurjoa
7 dlkala- tai kasvislientä
2 dlkuohu- tai ruokakermaa
30 gvoita
2 c. à s.hienonnettua tilliä
1 c. à c.suolaa
0.5 c. à c.valkopippuria
1 pclaakerinlehteä

Instructions

Prepare the vegetables

Peel and wash 500 g potatoes and 2 carrots. Cut the potatoes into cubes and the carrots into thin slices. Rinse and slice 0.5 pc leek into thin rings.

Sauté the vegetables

Heat 30 g butter in a large pot over medium heat. Add the potatoes, carrots, and leek. Sauté for 5 minutes until they soften slightly.

Boil the broth

Pour in 7 dl fish or vegetable stock and add 1 pc bay leaf. Bring to a boil and simmer until potatoes are nearly tender, about 15 minutes.

Prepare the fish

Cut 400 g salmon (skinless and boneless) into 3 cm pieces.

Add salmon and cream

Add the salmon to the soup and cook for 6 minutes. Then pour in 2 dl heavy or cooking cream and stir gently.

Season and finish

Season with 1 c. à c. salt and 0.5 c. à c. white pepper. Remove the bay leaf. Finally, stir in 2 c. à s. chopped dill.

Serve

Let the soup rest for a moment. Serve hot with fresh bread.
