
Traditional Khachapuri
An iconic Georgian cheese bread that is soft, rich, and perfect for sharing.

Steps
In a large bowl, mix 500 g wheat flour, 11 g dry yeast, 5 g sugar, and 5 g salt.
Gradually add 250 ml water and melted 30 g butter. Mix until an elastic dough forms.
Knead the dough on a floured surface for about 10 minutes until it is smooth and flexible.
Place the dough back in the bowl, cover with a cloth, and let rise in a warm place for about 60 minutes, or until doubled in size.
In a bowl, mix grated or crumbled 200 g feta cheese, grated 200 g mozzarella cheese, 2 eggs, and 50 g butter for the filling.
Once the dough has risen, divide it into 4 equal parts.
Heat the oven to 200 degrees Celsius.
Shape each piece of dough into a round disc.
Divide the cheese filling evenly onto the centers of the dough pieces.
Lift the edges of the dough to the center and pinch to seal, leaving an opening in the middle.
Place on a baking-paper-lined tray and bake at 200 degrees for about 20 minutes.
