
Cardamom Buns
Fancy Ravioli
Traditional round cardamom buns are a cornerstone of Finnish baking. These soft, spiced pastries are made from a yeast dough and get a beautiful shine from an egg wash and a crunchy topping of coarse sugar.
Ingredients
| 250 ml | milk |
| 11 g | dry yeast |
| 75 ml | sugar |
| 3 ml | salt |
| 5 ml | cardamom |
| 1 pcs | egg |
| 420 g | wheat flour |
| 100 g | butter |
| 1 pcs | egg |
| 30 ml | pearl sugar |
Instructions
Warm 250 ml milk until it is nicely warm to the touch, about 42 degrees Celsius.
Mix 11 g dry yeast with a small amount of flour and add the mixture to the warm milk.
Stir 75 ml sugar, 3 ml salt and 5 ml cardamom into the milk.
Add 1 pcs egg to the dough liquid and mix until smooth.
Gradually add the rest of the 420 g wheat flour while kneading vigorously.
Add the softened 100 g butter to the dough and continue kneading until the dough is elastic.
Cover the bowl with a cloth and let the dough rise for 60 minutes.
Divide the dough into 12 parts and roll into round buns.
Place the buns on a baking sheet, cover with a cloth, and let rise for 30 minutes.
Brush the buns with 1 pcs egg wash and sprinkle with 30 ml pearl sugar.
Bake in the oven at 225 degrees Celsius for 10 minutes.
