
Buns
Traditional round buns are a cornerstone of Finnish baking. These soft, cardamom-spiced pastries are made from yeast dough and get a beautiful shine from an egg wash and a crunchy surface from pearl sugar.

Warm the 250 ml milk to well above lukewarm, about 42 degrees Celsius.
Mix the 11 g dry yeast with a small amount of flour and add the mixture to the warm milk.
Mix the 65 g sugar, 2.5 g salt, and 2.5 g cardamom into the milk.
Add the 1 egg to the dough liquid and mix until smooth.
Gradually add the rest of the 420 g wheat flour to the dough while kneading vigorously.
Add the room-temperature 100 g butter to the dough and continue kneading until the dough is elastic.
Cover the bowl with a cloth and let the dough rise for 60 minutes.
Divide the dough into 12 parts and roll them into round buns.
Place the buns on a baking tray, cover with a cloth, and let rise for 30 minutes.
Brush the buns with 1 egg and sprinkle 25 g pearl sugar on top.
Bake at 225 degrees for 10 minutes.
